Who doesn’t love S’mores? And chocolate covered strawberries? This recipe for grilled strawberry s’mores is an updated twist on the classic that takes it straight from the kid’s campfire to the grownup’s BBQ! It is a perfect summer dessert… Gooey caramelized toasted marshmallows, warm melted chocolate, sweet tart tangy strawberries, and crunchy chewy toasted baguette all complimented and highlighted with the slight bite of salt sprinkled on the chocolate.
Grilled Strawberry, Marshmallow & Dark Chocolate S’mores Recipe (serves 4)
- 12 large strawberries
- 12 large marshmallows
- 12 slices French baguette
- Olive oil, for brushing
- One (6-ounce) bar dark chocolate, cut into 12 pieces
- teaspoon coarse kosher or sea salt
Prepare a medium-hot fire on one side of your grill.
Thread marshmallows on 4 skewers (if using wooden skewers, pre-soak them).
Place the strawberries in a grill basket.
Lightly brush the slices of bread with olive oil.
Place the marshmallows and strawberries directly over the fire and grill, until the marshmallows are browned and the strawberries are warmed through. (Keep a close eye on the marshmallows and turn them frequently. Allow 4 or 5 minutes for the strawberries and 1 to 2 minutes for the marshmallows.)
At the same time, grill one side of the bread. Turn the slices over and move to the indirect side of the grill. Place a piece of dark chocolate on each slice and sprinkle with a pinch of salt. Remove from the grill when the chocolate is soft but still holds its shape.
Place one marshmallow and one strawberry on each slice of bread with chocolate.
